Howell's Mercantile Blueberry Muffins

Howell's Mercantile Blueberry Muffins make a perfect morning breakfast or sweet treat! Enjoy with a cold glass or milk, or cup of coffee! Surprise someone with these bakery style muffins!


1 Package Howell's Mercantile Pound Cake Mix

1/2 cup unsalted butter, softened

2 beaten eggs

1/3 cup milk

1 cup fresh blueberries

Optional: sugar for topping


Preheat oven to 325 degrees

Place cupcake liners in muffin tins, or grease and flour 12 muffin tins

In mixing bowl, combine Howell's Mercantile Pound Cake Mix, 1/2 cup softened butter, 2 beaten eggs, and 1/3 cup milk.

Mix to form dough, then fold in 1 cup fresh blueberries. Drop by spoonfuls into muffin tins, filling about 2/3 from top.

If desired, sprinkle tops with sugar. 

Bake for approximately 22-25 minutes, or until tops are golden brown and muffins are done in centers. Yield: 12 muffins
